Ingredients:

For 4 people:

  • 200 gr floor (type 00 or 45)
  • 2 eggs lightly beaten (note: not cold!)
  • Pinch of salt

Mix the ingredients to obtain smooth paste: add water if it seems too dry or add flour it seems too liquid.

Let the pasta rest at least 15 min (either filmed in plastic or in a dish covered with a wet dish towel).

Roll out the pasta on a floured board or use a pasta mill to attain a thin sheet.
