Ingredients:

  • Pasta:
    • Follow the classic pasta recipe
    • Optional: for a black colour add squid ink to the basic recipe
  • Stuffing:
    • Shrimps – prawns – langoustines
    • Ricotta
    • Herbs and spice (parsley, dill, whatever you have to hand)
    • Salt and peper
  • Sauce and accompaniment:
    • Cherry tomatoes
    • Soured cream
    • Passata
    • Fish bouillon (home-made or not, with white wine or not)
    • Fresh parsley
    • 1 lemon

Method:

Chop up the shrimps/prawns/langoustines and add the ricotta and herbs, salt and peper.

Prepare the ravioli according to the shape you choose.

Cut the tomatoes in two. Heat a pan with a dash of olive oil. add the tomatoes to break the skins. Add the bouillon and the passata and heat. Add the parsley.

Off the gas, add the sour cream and allow to dissolve. Add the lemon juice.

Cook the raviolis in boiling water (not salted) and finish their cooking in the sauce.
